feat(examples): rebuild the catalog along the course weeks - #10

Replace the 35 examples with 51 sketches that follow the IT01-IT08 and IT11 course documents. Each sketch names the slides it illustrates and contains a learning objective, an observable result, experiments, learning questions and Tutor focus questions. New topics include choosing a data type, char/ASCII, global/local scope, blinking, parseInt, #define, time differences, button edges, else-if, switch menus, timing without delay, binary output, arrays as parameters, typedef, a header with struct and functions, test cases and the matrix steps of IT11 with mat_func.h. Fix the Tutor topics: misconceptions now state the wrong belief, and the long-values concept IDs match their content. Point the quality cases to the new example IDs and set the manifest ref to v3.0.0. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
