invoice-ninja: update to 5.13.43 (octane tags dropped -o suffix)

Description

The app has been stuck on 5.12.28-o since Sep 2025.

Upstream's Octane publish workflow (invoiceninja/dockerfiles@octane) now strips the -o suffix from tags, so invoiceninja/invoiceninja-octane is published as plain 5.13.x. 5.12.28-o is the last suffixed tag, so Renovate (which treats -o as a compatibility suffix) never found a newer version.

Changes

• Keeps the same image repository (invoiceninja/invoiceninja-octane), so the app stays on the Octane variant
• Moves the tag to 5.13.43 (multi-arch digest pinned), so future Renovate updates follow the unsuffixed tags
• Bumps app_version to 5.13.43 and the app version to 1.3.0

Why 5.13.43 and not the latest version

Images 5.13.44 through 5.13.47 are built on FrankenPHP 1.13.0, which breaks frankenphp php-cli artisan (Command "artisan" is not defined). The container then fails during startup. This is tracked upstream in invoiceninja/dockerfiles#894 and fixed in FrankenPHP 1.13.1 (php/frankenphp#2691). 5.13.43 is the last image built on FrankenPHP 1.12.x. Once upstream publishes an image built on 1.13.1, Renovate can pick up later versions.

The image still runs as UID/GID 999, uses /app/storage, and keeps the same entrypoint and LARAVEL_ROLE handling, so no template changes are needed.
