P1 Badge Align wasmtime-wasi with wasmtime to avoid type mismatch

This bumps wasmtime to 41.0.3 but keeps wasmtime-wasi at 39.0.1, which pulls in its own wasmtime 39.x. In this crate you use wasmtime::{Engine, Store} alongside wasmtime_wasi::WasiCtxBuilder (e.g., in runtime.rs), and the WASI APIs are typed against the wasmtime version they depend on. That means Store/Linker types from 41.0.3 are not interchangeable with the 39.x types inside wasmtime-wasi, leading to a compile-time type mismatch or forcing two incompatible wasmtime versions in the graph. To keep the build working, wasmtime-wasi needs to be bumped to the matching 41.x release.
