fix(deps): resolve critical/high Dependabot alerts

Summary

Closes the open critical/high Dependabot alerts that have a patched release (#10, #11, #13, #14, #18, #23, #24, #25, #31, #32, #34).

All affected packages are transitive (Expo/Metro/React Native toolchain), so the fix is an npm overrides block in package.json pinning: shell-quote -> 1.10.0, tar -> 7.5.22, ws 6.x/7.x/8.x -> 6.2.6/7.5.13/8.21.3, undici -> 6.28.0, postcss -> 8.5.26; lockfile regenerated.

Not addressed: image-size #42/#43 have no patched release (only fix path is a breaking expo@57 upgrade).

tsc --noEmit and expo lint pass locally.
