Go 1.27 was just released. Run test-dash, test-ash, and test-macos as a matrix over both versions so regressions on the new toolchain surface before go.mod is bumped. Co-Authored-By: Claude Sonnet 5 <noreply@anthropic.com>

Go 1.27 is out. Adds it to a version matrix for test-dash, test-ash, and test-macos so both the current (1.26) and new (1.27) toolchains are exercised on every PR/push, instead of only 1.26.
lint stays on a single Go version (static analysis only).
