Support aws-sdk-js-v3 #1

Since dynamo-easy will start supporting aws-sdk v3 in the next major release. We should update the following to support this either directly related or driven by optimization:

Update Samples to work with the new version of dynamo-easy
Switch to aws-cdk (Migrate to aws-cdk to create the infrastrucure #2)
