- Rename xml.profiles to xml.format.profiles with flat structure
(format override fields at top level, not nested in format: {})
- Fix pattern type from array to string
- Add DocumentMatcher criteria (namespaceURI, publicId, systemId,
grammarURI) to xml.colors, xml.references, xml.symbols.filters,
and xml.filePathSupport.mappings
- Add DocumentMatcher.md documentation page with detailed examples
- Add Formatting Profiles section to Formatting.md
- All settings descriptions link to DocumentMatcher docs

Seems good on this end. I'd prefer to check over eclipse-lemminx/lemminx#1875 first, but if you really want this merged, then I think that's probably fine.
