docs: match schema, IBD, and CLI notes to the node

Summary

• Operator and schema docs now match the live node: schema file headers are version 26 (openable 22–26), 64 blocks in transit per peer, densify 32/64, and --mempool-size-mb as N × 1_000_000 weight units.
• CLI names in the product docs are --sh-index and --sp-tweaks. Electrum and Esplora start with the scripthash index off. generate* also runs on an OP_TRUE signet. Electrum protocol_max is 1.6.
• Scripthash extract workers are one per 1.5 GiB. Confirm commits the height fence and confirmed[] before scripthash write-behind. Linux io_uring falls back to pread. Mempool sidecar schema is 3. Q-69 is closed because lightning.md already states the CLN and ldk-node contract. SV2 template-provider plans A–C are marked landed.
