Document the new OptimisticConcurrencyMode enum
Updated articles:

• Session overview => update the "Concurrency Control" section
• Open a session => update the "Sessions Options" section
• Cluster transaction overview => update the "Cluster-wide transaction vs Single-node transacction" section
• Configure optimistic concurrency => rewrite the 'How to enable optimistic concurrency' article
• Conventions => update the new enum
• Disable tracking => mention the constraints
