Fix CMakeLists.txt to replace legacy variable-based inclusion with Eigen's exported CMake target:

This allows the removal of nasty include path hacks in the CI builds and should enable the package to build on conda-forge. This has no impact on the precompiled wheels on PyPI, but a version bump is still required in order for conda-forge to pick up the fixed CMakeLists.txt
