Vite+ 1.0 is stable. This moves the catalog from 0.3.3 to 1.0.0 and Vitest to the bundled 5.0.1.
pnpm-workspace.yaml: catalog bump; theminimumReleaseAgeExcludeentries move from the ten 0.3.3 packages to their 1.0.0 counterparts until they clear the release age.No source, test, or config changes were needed.
