Motivation
PowerSync doesn't actually have a default, so calling LWW the "default" is not accurate.
Notes
The "Custom Conflict Resolution" doc is probably way to heavy in the current form. We could probably benefit from something simpler that is in-between, but leaving that as a subsequent project.
