fix(llms): resolve latest versions in llms.txt at build time - #156

Add an Antora extension that rewrites every /<component>/latest/ segment in the published llms.txt with the component's actual GA version, so the published file always links to real, CI-validatable URLs. Modules that exist only in a prerelease version stay pinned to that version in the template. Extend the extension tests to cover the new behaviour and document the llms.txt maintenance rules in a nested ui/AGENTS.md.
