Summary

The README was two lines with no usage example, install instructions, or link to documentation. Rewrote it with:

Test plan

  • uv run pytest passes (unaffected, README-only change)
  • uv run ruff format --check . passes on the embedded code block

The README was two lines with no usage example, installation
instructions, or pointer to any documentation. Add a real description
of what the model does, an install command, a runnable polyfc()
example, workflow status badges, and a link to the new GitHub Pages
docs site (meyer-lab.github.io/valentBind).

Resolves conflicts from #26-#31/#33 landing on main first: kept both
the ruff and mkdocs additions to the dev dependency group, and
regenerated uv.lock from scratch rather than hand-editing it.
