Reduce Maven dependencies and upgrade Beam version - #31

Reduced dependencies to the minimum required for local direct runner. Upgraded Beam version to 2.59.0 to support running on newer JDKs (17, 21, 26). Removed unused GCP, PubSub, and other runner dependencies/profiles. Fixed AvroCoder imports due to Beam relocation. Removed Guava dependency in AggAndCountWindows.
