docs: add Helix screenshots to the gallery and the Helix page - #26

Captured from a Helix build running each variant against its own theme.rs, so the README gallery and docs/extras/helix.md finally show the editor instead of describing it. The images also back the upstream Helix theme submission, which links to them by commit. Five Helix screenshots, one per variant, land in
assets/screenshots/. The README gallery gets a Helix block showing Neon and Dawn side by side, and the Helix docs page opens with the Neon capture above the install steps.The images also back the upstream Helix theme submission (helix-editor/helix), which links to them by commit SHA, so they need to live on the default branch.
