Thanks for doing this, @obigriffith! We have an option for creating a docx file and we convert that to pdf if ever needed. |

Allow more easy rendering to PDF
What changes are being implemented in this Pull Request?
Added some options to _quarto.yml and individual chapters so that quarto render --to pdf successfully builds a pdf
