docs(site): document the conformance Document prop

Documents conformance, the Document prop added in renderer 4.9.0 (#3529): a table row plus a Conformance type section listing the six PDF/A values, the rule that pdfVersion defaults to what the level requires (1.4 for PDF/A-1, 1.7 for PDF/A-2/3), and the caveat that fonts must be registered for a document to fully validate. Also adds .env*.local to apps/site/.gitignore so local Next.js env files stop showing up as untracked.
