Fixes anthropics#85. The README examples pinned claude-opus-4-1-20250805 and claude-sonnet-4-20250514. Updates the fallback example to claude-opus-5 / claude-sonnet-5 and the inline-settings example to claude-opus-5. Bedrock and Vertex examples left alone; those tags may be deliberate.
