Add Gen AI summary to introduction

Resolves #62

Rather than repeat the entirety of the Carpentries statement here, I have linked to it but also reposted their list of reasons (with a few minor alterations, mainly signifying that this is an intermediate rather than beginner course) to avoid generative AI during the training.
