Bump major version past v0 (Read through and discuss the protobuf best practices)

Protobuf provides a lot of best practices for writing protobufs and designing APIs. These can be found under:

and
https://protobuf.dev/programming-guides/api/

Especially the latter one is pretty extensive, but is meant to help in designing a future proof and robust API. We should read through that and decide on which ones we want to follow and potentially redesign what we already have BEFORE the initial release - afterwards, the foundation cannot really be changed anymore.

Tentative plan for how to do this:

• Everyone read these docs.
• Sit down together and talk about which of these we will actually follow.
• Update developer docs with the outcome - essentially a "common review feedback" guide like https://go.dev/wiki/CodeReviewComments

Because we decided to keep the protobuf at v0 (and may do breaking changes) this is not a priority right now. But before we bump the major version we should double check everything is in order.
