We're considering putting the meeting minutes up on the club website (os2g.club), but the fact that they're formatted in LaTeX complicates this.
These meeting minutes aren't really using any features unique to LaTeX, so I vote we convert them to Markdown (which this PR does). It's easier to read, edit, and compile to HTML (for the website). It's also the same format that the club used for meeting minutes back in 2017-18.
