What: File → New Simulator… opens a SwiftUI panel, matching Settings and the simulator this replaces: Name, Device Type, OS Version, with Cancel, Previous and Create. Previous fills the fields with the last simulator created here, remembered in the viewer's settings. A simulator that is created then opens, rather than appearing only in a list.
