docs(venues): document all Hyperliquid requests

Summary

• New packages/shared/venues/HYPERLIQUID.md cataloging every request this codebase makes to Hyperliquid: the metaAndAssetCtxs REST call, the activeAssetCtx WS subscription, the candleSnapshot REST call, and the client-side coin-icon SVG fetch.
• Each entry documents the endpoint, request body, response shape (TS interfaces pulled from hyperliquid.ts), the call site, and a plain-language summary of what it's for.
• Includes a short "not yet called" section (margin tables, predictedFundings, perpDexs) referenced in the trading-venues research for later phases, plus links to the official HL docs.

Test plan

• Docs-only change; no code paths touched.
• Cross-checked every request shape against packages/shared/venues/src/hyperliquid.ts and its callers (api-gateway, AssetIcon.tsx).
