Refresh Daijin and utility documentation

Summary

• update the Daijin tutorial prerequisites with gnuplot, bgzip, and BLAST+ notes
• replace the obsolete UniProt protein download URL with the current UniProt REST stream endpoint and wrap the wget command
• align the utilities page with the current mikado util CLI by documenting collect_compare and removing the old merge_blast subcommand section
• add short descriptions for several installed helper scripts that were previously missing from the utilities page

Addresses several documentation items from #461.

Validation

• git diff --check -- docs/Tutorial/Daijin_tutorial.rst docs/Usage/Utilities.rst
• UniProt REST stream URL returned 200 OK to a HEAD request
• Not run locally: docs build/tests (documentation-only change)
