chore: update recipes/docs for CNA-parity extension slugs

Summary

• Update mock catalog, recipes, docs, and terminal demos to new extension slugs
• Use stack-correct Docker addons (fastapi-docker, django-docker, celery-docker) and postgres / development-container

Dependency

Aligns with cpa-templates#63. Merge after (or with) the templates rename.

Test plan

• Recipes section commands copy the new addon names
• /docs/extensions examples list stack Docker + postgres
• Unit tests for schemas/utils still pass
