Subject: [PATCH 2/2] ci: use an MSRV-compatible uuid for Rust 1.88 tests

Use uuid 1.26.1 in the existing MSRV downgrade recipe. Keep uuid 1.28 in the lockfile for stable tests and retain the declared Rust 1.88 MSRV.
