Update the Github MCP server

Github has its official MCP server now: https://github.com/github/github-mcp-server
Use the instructions of running it on a container to deploy an instance on our test OpenShift cluster.

There are two tasks for this issue:

1. Deploy the latest github MCP server
2. See if we can use Github Apps token instead PAT for the experiments in this repo
