Replace vue3-editor

We somehow need to remove vue3-editor as it hasn't been updated in ages, and uses an old version of quill.

We should try and just go with quill directly, and cut out the vue3-editor package.

@dantownsend As I can see, using Quill directly in Vue is not a pleasant experience (apologies if I'm wrong). We can use this package (fork) because it requires minimal changes to the current code and the package is maintained. A small problem is that this package does not have a license. The MIT license is only indicated in the README.md. Is this a problem and should we ask the maintainer to include the license in the source code as well?
EDIT:
There is also this package (Vue3 wrapper around Quill 2 to make working with Quill easier). This requires a little more work, but not that much.
