Support for monitoring only 1 (or more) category

Cursory look-through the code suggests that this plugin listens forum-wide for new posts. Would it be possible to have it listen for specific categories?

I could put together a PR possibly when I have some free time, just wanted to get the idea down on paper 😄

An actual potential use case would be a support forum on NodeBB, that hooks into #support on slack.
