Support deleting the NimbusEnrollments entries for the current profile

We can no longer switch between RS stage and prod in profiles because the timestamps will not line up. If we want to support this, we need the capability to wipe the NimbusEnrollments sync timestamps table for the profile.

We should also probably reset all enrollment history if we're switching collections, too.
