Repoint them at helldweller/dispatch and https://helldweller.github.io/dispatch/, hand CODEOWNERS and the code-of-conduct contact to the fork owner. Kept as is: links to Jamyn/dispatch-docker (still the Compose way to run this fork), historical issue references (Jamyn/dispatch#81, #129), copyright and plugin authorship. The Release badge switches to tags since the fork has no GitHub Releases; the Codecov badge is dropped because Codecov is not set up for the fork.
