Enable more comprehensive option functionality in --run mode

Suggestion

I've used many custom options when building the software, but these options are ineffective under --run.
For example, as mentioned in this issue --state-dir, as well as --disable-rofiles-fuse and others.
I'd like to see more comprehensive options provided for --run, or a more concise way to test running the already-built software.

Note --run isn't much reliable way to test software as it doesn't support portals. Only build & install gives you reliable testing.
