[Docs]: Example docker-compose file causes git timeouts on Windows

Problem Statement

As detailed in appsmithorg/appsmith#35644 there are performance issues with the git integration when running via docker on Windows that can be resolved by a small tweak to the docker-compose.yml file used to create the appsmith container.

Change the docs at https://docs.appsmith.com/getting-started/setup/installation-guides/docker to create a docker volume for the appsmith-stacks directory, instead of mounting the host filesystem.
