Use json instead of mat files for asset info.

Currently, info for each asset is stored as a mat file. This works fine.

For portability and human-readability, we should change this to .json. This will mean adding jsonlab as a toolbox dependency.

This should be an implementation detail. Calling functions should not notice the difference.
