Make mock user configurable when bypassing auth

In the lib/rpi_auth/engine.rb file the user information is set when bypassing auth.

Allow the user details to be provided in the configuration so an app can define the user details it wants to receive when bypassing authentication.

The current user info could be set as a default which is then overridden when set via configuration.
