FoldX v4 discontinued, update tests and coverage

As of EOY 2024 FoldX v4 is discontinued by the development team.
It appears only for v5 and v5.1 renewed binaries are provided.
This means that tests under poli/src/poli/tests/registry/proteins/ related to FoldX are failing.
An update of the test functions, rel. binaries, and coded values is required.

The poli dev team is aware of the issue and we're working on a solution.

The relevant Linux and MacOS binaries have been renewed by the author teams and are available to users.

Adding support, tests and better integration for v5 and v5.1 will be added to the development plan.
