Improve documentation for event schemas and emitted contract signals

Document the current emitted events and the payload structure so that off-chain components can integrate with confidence.

Acceptance criteria:

• Event schemas are listed in a central document.
• The examples reflect the current contract implementation.
• The documentation is easy to maintain as new events are added.

I reviewed the current docs/EVENTS.md and the env.events().publish(...) call sites across the campaign, donation, withdrawal, escrow, dispute arbiter, platform config, and commission agreement contracts. The central document currently covers only part of the emitted surface. I can extend it with the exact topic tuples, payload types and field ordering, implementation-linked examples, and a maintainable checklist for adding future events. I will cross-check every documented schema against the current contract source and run the repository documentation, test, and lint checks before the Wave deadline.
