Decouple head_tracking node

[head_tracking](https://github.com/ATR-Lab/coffee-buddy/blob/main/coffee_ws/src/coffee_head_control/coffee_head_control/head_tracking.py) is a monolithic node. It couples the head tracking logic along a GUI. Refactor and remove the GUI logic. This will enable us to run I headless.
